This vegan mac and cheese will blow you away! Such a creamy, cheesy flavor that you'd never know it was vegan.

Ingredients

Cashew Cheesy Sauce
  • 1 ½ cups raw cashews, soaked for 8 hours*
  • 1 ½ cups water
  • 1/3 teaspoon Vör aquafaba powder
  • 1/4 cup nutritional yeast
  • Juice of 1/2 lemon
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon dijon mustard
  • 2 teaspoons cornstarch
  • 1 teaspoon soy sauce
  • 1 teaspoon sea salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon chipotle powder
Pasta
  • 16oz pasta of choice

Instructions

  1. Prepare 16 ounces of pasta of choice
  2. Blend ingredients together for cashew cheesy sauce in a high powered blender or food processor. Blend until smooth, about 2 minutes. 

Notes:

Soaking for 8 hours is recommended for the smoothest consistency, but feel free to soak them for less time (2 hours minimum) or boil them for 5 minutes.
