Our Guide to Aquafaba

About Aquafaba

Aquafaba, meaning “bean water,” is the liquid found inside a can of chickpeas. Due to the starches found in the liquid, it holds amazing binding properties, and can be used as a substitute for eggs when baking. Unlike other egg substitutes, such as flax seeds, aquafaba allows baked goods to rise, while also leaving them with a light and fluffy texture. When whipped, aquafaba forms stiff peaks that closely resemble that of an egg white.

Beyond baking, aquafaba can be used in a host of different ways. Because of it’s incredible binding properties, it can be used in plant-based sauces, dressings and mayos. It also helps to emulsify sauces and leaves them smooth and silky. Aquafaba has also been shown to be especially useful for making a variety of plant-based products, including macarons, meringues, fudge, nougat, mousses, frozen non-dairy desserts, marshmallow, non-dairy cheese, meat alternatives and more. Aquafaba can even have benefits in cosmetic uses, as it is a natural ingredient that can create a light and airy foam.

Aquafaba has little to no taste, and cannot be detected in baked goods, making it a wonderfully versatile ingredient.

About Our Aquafaba Powder

A passion for wellness, food and innovation has led us to develop our aquafaba powder. Aquafaba is made only from chickpea broth, with no other additives or fillers. Our powdered version allows it to be a cost effective alternative to eggs in many cooking and baking applications. Our aquafaba is shelf stable, easy to ship and is ideal for both individuals and commercial use. Aquafaba powder is completely plant-based and certified vegan, kosher and non-GMO. 

Aquafaba can be used in its standard liquid form, or whipped into peaks depending on your intended use. Using a hand mixer or stand mixer is suggested for the aquafaba to reach stiff peaks, which usually takes about 10 minutes. Although we have ratios of powder to water we suggest using, the aquafaba powder is especially convenient as you can easily change the concentration of your aquafaba liquid depending on your intended use. Our aquafaba powder is shelf-stable, and lasts up to two years! Once rehydrated, we recommend using your aquafaba liquid within two weeks.

How To Use Aquafaba Powder

Our General recommendation for use is ⅓ teaspoon of aquafaba powder with 3 tablespoons of water to equal one egg. We recommend using ¼ teaspoon aquafaba powder with two tablespoons of water to equal one egg white. When making larger batches of aquafaba, we recommend using 1 tablespoon of aquafaba powder with one cup of water. You may find that some recipes call for the liquid from one can of chickpeas. One can of chickpeas contains approximately ½ cup aquafaba, which can be useful to know when measuring out your aquafaba powder.

Some tips to assure success when using your aquafaba: Make sure the kitchen tools you aquafaba comes in contact with (bowls, mixers, whisks) are squeaky clean! Any oily residue can keep the aquafaba from whipping. Make sure to open your aquafaba jar in a dry space, and keep it out of humidity to prevent clumping and hardening of the powder. Additionally, adding cream of tartar to your aquafaba can be beneficial as it helps to reduce the breakdown of texture when whipping the aquafaba, allowing it to stabilize.

Our Faba Foamer is our classic aquafaba powder, packaged specifically for use as a beverage topper. This is an ideal solution for those looking to cater to all diets. Aquafaba is a great alternative to egg whites in many cocktails, as well as vegan whipped cream or latte foam. Faba foamer not only has no eggy taste, but reduces the risk of food borne illness. When using as a cocktail foamer, simply add the powder to a cocktail shaker along with the other ingredients. When poured, it will produce a thick foam at the top of the drink.
